P is for Pumpkin

It's now fall,
so a field trip to the pumpkin patch is in order.
they all had partners to hold hands with
and walked in line

They were all so excited

They listened to a pumpkin tale

and sang and made music with gourds.

Happy Harvest Days

Halloween's Past

Halloween is one of my favorite times of the year
Taylor's first halloween he was only 9 months old
he was a puppy but I lost my pictures of that (booooo)

The next halloween he was a pirate..

and learned all the tricks to getting all the candy!

When he was two..
he was a "boo ghost"
(some people thought he looked like a gigantic q-tip)

What can I say...
other than he rocked his Boo Ghost
and didn't forget that he got treats for some tricks.

This year his costume was his choice....
A character from his favorite book...

Little Eagles Fall 2011

Taylor started soccer
"Little Eagles"
a bunch of 3 and 4 year old boys and girls
you can only imagine...

I was a coach

we met new friends

and learned new skills
scored a lot of goals and
played kick the coach

They all knocked me down to the ground with hard kicks:)

practiced jumping over hurdles and
dribbling between cones..
waited our turn and
did what simon said
tried not to use our hands (yea right)
and ran away from the shark
Taylor had a lot of fun, and
I loved coaching.
I could really get used to being a "soccer mom"!

So Cool at School

Taylor, 3 years old
started preschool

a big wall for beautiful artwork

good by mom...

Oreo Cookie Cream Cheese Cupcake

He had time to help in between swimming...

They are delicious and very easy to make.

Oreo Cookie Cream Cheese Cupcakes
Ingredients:
  • One box of Oreos, leave most whole but keep about 8-10 and coarsely chop
  • 1 pounds cream cheese, room temperature
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 2 large eggs, room temperature, lightly beaten
  • 1/2 cup sour cream
  • Pinch of salt
1. Preheat oven to 275 degrees. Line standard muffin tins with paper liners. Place 1 whole cookie in the bottom of each lined cup.

2. With an electric mixer on medium high speed, beat cream cheese until smooth, scraping down sides of bowl as needed. Gradually add sugar, and beat until combined. Beat in vanilla.

3. Drizzle in eggs, a bit at a time, beating to combine and scraping down the sides of the bowl as needed. Beat in sour cream and salt. Stir in chopped cookies by hand.

4. Divide batter evenly among cookie-lined cups, filling each almost to the top. Bake, rotating pan halfway through, until filling is set, about 22 minutes. Transfer to wire racks to cool completely. Refrigerate at least 4 hours (or up to overnight). Remove from tins just before serving.
